Low Carb Lunch Recipe: Spicy Shrimp Quinoa
Hi friends, welcome to another episode on Beauty Box TV this Thursday! I thought it would be fun to do a cooking vlog since I love making food. I’m also an incurable carboholic but I try to limit my carb intake, because let’s face it — eating too much just makes it all go to your waistline.
To satisfy my need for grains, I always turn to quinoa (or millet) but the great thing is that it’s not a carb, it’s a seed! It’s full of fat and protein. Though having said that, you should not overeat quinoa either because it’s highly caloric. I know this is a bit ironic that I’m eating something high in fat/protein to prevent myself from consuming too many carb calories — but here me out, it satisfies you like a carb but it feels lighter on your digestion and you don’t need a huge amount to feel satiated.
Recipe:
1/2 white onion, chopped
2 garlic cloves
2 cups vegetable stock
1 zucchini, chopped
3 small tomatoes, diced
2 cups quinoa (increases in volume when cooked; 4 cups cooked)
2 cups shrimp
1 tbs smoked paprika powder
1/2 tsp cayenne powder
2 tsp curry powder

nice recipe for quinoa but, i have to say im not much of a fan of quinoa because i don’t like the texture. is there anything else i can use in replacement of the quinoa?
@kimby: hmmm, perhaps brown or wild rice? It won’t be as low carb though but I think it could work nicely as a pilaf.
@Shari: do try it and let me know how you go! I always turn to quinoa when I need that grain kick without needing to resort to filling up on tofu or meat as a protein source.

Hi Sandra, thanks for the encouragement!! I’m sure you could replace the zucchini with another vegetable, like broccoli or asparagus. I’m really enjoying time with family in sunny Sydney and a week has just flown by!
